After Her First Acai Bowl Seven Years Ago, Superfoods Now Fill Leah’s Plate Every Day

It was love at first bite when Leah of Leah’s Plate tried her first superfood nearly seven years ago. Since then, she’s developed a vast collection of superfood and other nutritious recipes that are quick and easy to make, proving to foodies of all levels that eating healthy doesn’t have to be complicated. We caught up with Leah to get an exclusive peek into her journey from superfood enthusiast to accomplished food blogger.

What inspired you to create a blog that motivates others to lead happier and healthier lifestyles?
I always enjoyed reading healthy cooking and wellness blogs, and was so intrigued by them. I knew I had a wealth of information to share with others – from wellness tips to healthy recipes. I wanted to prove to others that you can create quick-and-easy healthy meals that aren't complicated and don't require tons of ingredients or steps. My blog also serves as the home to all my recipes that I hope others will discover and try.

Tell us about your background in cooking.
I was always very interested in cooking, and often watched YouTube videos from my favorite health bloggers for cooking tips and inspiration. I also attended the Biltmore Culinary Bootcamp, which was three full days of cooking, where I learned everything from knife skills to vegetarian and meat recipes. It was such an amazing experience and a great way to spend three days of my life! My husband joined in on the fun and it was so nice having him by my side for the experience.

What is your favorite meal to prepare for your family?
A comforting bowl of vegetable curry made with sweet potatoes, carrots, zucchini, bell peppers, and mushrooms. The base is made with coconut milk and lots of warming spices like turmeric, curry, cumin, pink sea salt, and cinnamon. I serve it over sprouted brown rice and it's such a heartwarming meal.

How did you first discover superfoods?
I had my first acai bowl in California about seven years ago, and it was packed with Maca Powder, Goji Berries, Chia Seeds, Hemp Seeds, and Bee Pollen. After a few months of incorporating superfoods into my diet, I grew attached to how good they made me feel – both mentally and physically. Now, my body craves superfoods, so I incorporate them into my meals every day.

What is your favorite superfood?
Mulberries make the most amazing topping on chia pudding or oatmeal, and I also love adding them to my homemade Superfood Trail Mix. They are also delicious on their own as a snack!

What is your favorite superfood recipe?

My favorite superfood recipe is definitely my Spirulina Chia Pudding. It’s made with 1/4 cup Chia Seeds, 1 tsp spirulina, 1 tsp Maca Powder, a pinch of cinnamon, 1 tsp maple syrup, and a 1/2 cup almond milk. You just combine all the ingredients in a blender, pour into a jar, cover, and refrigerate overnight. I love to top it with fresh berries, Hemp Seeds, Mulberries and Goji Berries in the morning.

How has Navitas played a role in your healthy lifestyle?
